Bonnet-Ponson Brut Rosé
Our Brut Rosé is elaborated following a process known as rose’ d
’assemblage. It consists of adding a small percent of red wine to
the traditional blend before the wine is bottled. This red wine,
vinified in a Burgundy process, is made from our parcel Le Clos of
Chamery where a pinot noir vine is grown specially for this
achievement (lower yield, richer concentration).
Visual aspect: between a rose petal and salmon pink color.
Nose: very expressive bouquet dominated by aromas of fresh fruit
(raspberry, redcurrant) and candy.
Palate: freshness extends over a tight red fruit structure
dominated by raspberry, cherry and pomegranate. Vinous notes and a
hint of spice mingle to form a fresh and tangy finish.
Match with food: dishes from South East Asia (Vietnam, Thailand)
that are salty sweet or sweet and sour. Tajine or preparations of
white meat cooked with honey, pink pepper and nutmeg. Charlotte
raspberries for dessert.
After two and a half years of aging, the result is a true
gastronomy champagne rosé with an attractive robe, elegant red
berry aroma, and a spicy finish.
